300g plain flour
200g cold hard butter, cut into small chunks
2 tablespoons icecold water
pinch of salt

120g of golden syrup
2 cups of cornflake cereal
55g of butter or margerine
25g of caster sugar
100g of strawberry jam, slightly warmed
pinch of salt



Preperation time: 15 minutes   |   Cooking Time: 25 minutes


1. Mix together flour, salt and butter until it resembles breadcrumbs
2. Add water a little at a time, until dough holds together and forms a ball. wrap in cling film, and chill for about 30 minutes to firm.
3. On a lightly floured surface roll out dough into a circle about the size to fit a quiche tin.
4. Trim edges, leaving a little overhang (for shrinkage), about 1cm all around the edge. Prick dough with a fork. Line with foil and fill with dried beans or pie weights
5. Bake quiche crust for 10 minutes at 190c


1. In a medium-large saucepan, melt the butter, sugar, golden syrup and salt together
2. Once the sugar has dissolved, gently fold in the cornflakes, making sure that all the cornflakes are coated in the syrup.
3. Remove pastry case from the oven and remove beans/pie weights and foil
4. Spread jam across the base of the pastry and top with the cornflake mixture
5. Bake for 5 more minutes until set (do not overcook or it will become brittle)
